Step 1: Marinate the chicken Clean the chicken and cut it into medium-sized pieces. In a large bowl, mix the yogurt, ginger paste, garlic paste, green chilies, cumin seeds, coriander seeds, garam masala, turmeric, chili powder, and salt. Add the chicken pieces to the bowl and mix well. Cover the bowl with plastic wrap and refrigerate for at least 2 hours.

Step 2: Prepare the rice Wash the rice in cold water until the water runs clear. Soak the rice in cold water for 20 minutes. In a large pot, bring 4 cups of water to boil. Add the rice, salt, and stir. Cook the rice for 5-6 minutes, until it is partially cooked. Drain the rice and set it aside.

Step 3: Prepare the chicken In a large pot, heat the oil over medium heat. Add the sliced onions and sautΓ© them until they are golden brown. Add the marinated chicken to the pot and stir. Cook the chicken for 10-12 minutes, or until it is browned on all sides.

Step 4: Layer the chicken and rice Spread the chicken and onion mixture at the bottom of the pot. Layer the partially cooked rice on top of the chicken. Sprinkle the mint and cilantro leaves on top of the rice. Repeat the layers until you have used up all the chicken and rice.

Step 5: Cook the biryani Pour the water over the layers of chicken and rice. Cover the pot and cook the biryani on medium heat for 20-25 minutes, or until the chicken is fully cooked and the rice is tender. If you want to add saffron, dissolve a pinch of saffron in a little bit of warm milk and pour it over the top layer of the biryani before covering and cooking.

Step 6: Serve the biryani Once the biryani is cooked, remove the pot from the heat and let it rest for 10 minutes. Use a fork to fluff up the rice and mix the chicken and spices. Garnish the biryani with some additional chopped cilantro and serve it hot with raita, chutney or sliced cucumber and tomato salad.
